This might be my most "crunchy granola" post ever. I just want to be able to look back in our blog book someday & remember these two experiments. Maybe we will still be doing them years from now... Maybe not :).
The first is a picture of our garden this summer. This is our second attempt..last year I had really good luck with herbs but not with tomatoes, so I changed it up this year & planted some different things in the very early spring. So far so good- we have onions, Yukon potatoes, a salad blend of lettuce, rosemary, & strawberries all growing well. I've loved going out most nights to pick enough lettuce for our salad with dinner- it has definitely increased our salad eating.
The second is a picture of our adventure into juicing. Toms mom is a big proponent & talked us into watching joe cross' documentary- fat, sick, & nearly dead on netflicks. Tom is not usually on board with over the top healthy substitutions, but he surprisingly told me to go buy a juicer the very next day. We did a short juice-only cleanse & are now using it as a supplement to get tons more veggies into our diet. The green juice pictured has tons of spinach, kale, cucumber, celery, broccoli, plus a green apple & lemon to make it edible. It's actually not bad now that we are used to it... Even judah likes the orange (mostly carrot) juice & tolerates some of the green. We feel so blessed that God has given us the means to have healthy options for our family- so many don't have that choice. No more complaining about the taste or inconvenience- we are blessed!
